Using a small ice cream
scoop, form small balls of ice cream and roll in fine coconut. Place into
freezer immediately as they're made and chill well.
Stack them into a snowball
pyramid!
This is a super easy festive
dessert that can be drizzled with your favorite sauce. Ice cream balls
can also be rolled in cocoa, sugar sprinkles, cinnamon sugar or whatever
floats your boat.
Coconut Snowball Cocoa
1 pt Vanilla ice cream
Scoop ice cream into 8 small
balls, immedaitely roll in coconut.
Place on waxed paper-lined
baking sheets; freeze until ready to use.
Whisk cocoa into milk in
a large suacepan. stir in cream of coconut and
coconut extract.Bring to simmer over medium-high heat. Pour into 8 large
heatproof mugs. Float ice cream balls in cocoa.

Ann shortcut of Instant Cocoa :)
Rice Krispie® Snowballs
3 tablespoons margarine
1 package (10 oz., about
40) regular marshmallows or 4 cups mini marshmallows
6 cups Rice Krispies®
cereal
Vegetable cooking spray
2 cups Icing sugar
1. Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Rice Krispies® cereal. Stir until well coated.
3. Slip your hands into two baggies (this is the fun part:) grab a chunk of butter and grease up the baggies then form the krispy goo into balls. Roll in icing sugar to make them "snowy"
(Marshmallow Creme Directions: Melt margarine in large saucepan over low heat. Add 1 jar (7 oz.) marshmallow creme and stir until smooth. Cook and stir constantly 5 minutes longer. Remove from heat. Continue as directed in steps 2 and 3.)
(Microwave Directions: Microwave margarine and marshmallows at HIGH 2 minutes in microwave-safe bowl. Stir to combine. Microwave at HIGH 1 minute longer. Stir until smooth. Add cereal. Stir until well coated.Press into pan as directed in step 3.)
